When I try to copy data files being recorded on DAQLOGGER to another folder, recording stops.

When data files are being recorded, the OS prevents them from being accessed by other software. If DAQLOGGER attempts to write to a file being copied, it will be prevented from doing so. Do not copy files being recorded.
