I hear that maintenance services for my µR1000/µR1800 have been discontinued. Do you offer consumables (pens, plotter pens, ribbon cassettes, and chart paper)?

Yes. Those consumables for the µR1000/µR1800 are the same as those for the current product, the µR10000/µR20000.
